All I have gotten from Black Bear Guai's boss battle is that he is obviously Smokey the Bear's arch nemesis. I mean look at him, he's BEARly containing those wild fires! Such disdain, it's unBEARable.
Wouldn’t these boss fights be more fun if instead of just having to hit its legs over and over there were initiated quick time events that allowed you to climb on top of them and do a special attack?

You can switch between stances using the D-pad. However, there are so many good things to invest points into, it's more practical to pick one stance that you prefer and just use that one. You can change the points around at shrines.
The stance you use is largely a matter of preference. None of them are bad. I personally would switch my stance points depending on my weapon I was using (some have bonuses w/ stances).
